SPARKLING WINE PORTFOLIO
The factory exclusively utilizes grape varieties specifically cultivated for sparkling wine production, including Chardonnay, the Pinot group, Riesling, Aligote, Sauvignon, Traminer and others recommended for sparkling wine crafting.
Each raw material undergoes a thorough processing procedure. This process eliminates extra microflora, unnecessary proteins, tartaric acid, and heavy metal compounds from the wine, while also reducing the redox potential.
At our winery, we employ a periodic reservoir method, fermenting in large stainless steel and enameled containers that range from 2.5 to 5 thousand decalitres in size. To enhance the quality of the reservoir champagne and to develop a gentle bouquet and flavor, the sparkling wine is matured on yeast extracts for a period ranging from 1 to 6 months.
